Monday: Homemade Taquitos, spanish rice

Tuesday: Tortilla Soup

Wednesday: Parmesan Chicken

Thursday: Spaghetti a la Homer

Friday: Homemade Pizza

Saturday: Out to sushi!

Sunday: Crockpot chicken curry

Homemade Taquitos

1-2 cups leftover beef brisket, torn

2 cans kidney beans

1 cup cheddar cheese

1 can chilies

1/2 Tbs. taco seasoning

Combine ingredients in a food processor with chopping blade. Whir together until smooth (like the consistency of bean dip). Soften 20 corn tortillas (place in skillet with corn oil, heat and turn over). Put 2 Tbs. of filling into each tortilla. Roll up well. When all are done, heat oil (1 inch deep) until medium hot. Add Taquitos 8 at a time to the hot oil. Turn when brown. Place on cookie sheet. Keep warm in 250 degree oven until all are done. DELICIOUS!
