The Best Cream Scones Ever

I made these this morning, and have made them for years now. This recipe is adapted from the Joy of Cooking.

2 cups all purpose flour

1/4 cup sugar

1 Tbs. baking powder (yes, tablespoon)

1/4 tsp. salt

1 1/4 cups heavy cream

Mix together the dry ingredients until combined. Add heavy cream and barely stir until mixed. Overmixing will make them tough. Roll into an 8-10 inch circle and cut into eight pieces like a pie. Place each piece (apart from each other) on a greased baking sheet. Bake at 425 for 12-15 minutes. Makes 8. Serve with butter, jam, clotted cream (if you really want to be Britishy), and, of course, Earl Grey tea.
